cornbread pan

My Dad passed a few weeks ago. In his last years he couldn’t cook for himself so he would often request certain things from me. His absolute favorite was his version of Mexican cornbread.
This is his cornbread pan. 🥰
Because he was usually working double shifts when we were kids, his recipes took advantage of mixes and canned vegetables.
Preheat oven to 400.
Place cast iron on stove top and preheat pan. Add 1 T corn oil to pan. If using divided pan, make sure oil coats sides and bottom of each section.
Mix together:
One pouch Martha White Mexican cornbread mix
