Homemade artisan bread

Mix the dough :

In a large bowl, mix the flour, salt and yeast.

Add the warm water and stir until the ingredients are well combined and a shaggy dough forms.

Cover the bowl with plastic wrap or a clean dish towel and let it sit at room temperature for 12 to 18 hours. The dough should double in size and become bubbly.

Shape the dough :

Once the dough has risen, roll it out on a well-floured surface.

With floured hands, gently shape the dough into a ball. Be careful not to deflate the dough too much.

Place the ball of dough on a piece of parchment paper and cover with a clean tea towel. Let rise for another 1 to 2 hours.

Preheat the oven :

About 30 minutes before the dough is ready, preheat your oven to 450°F (230°C).

Place a Dutch oven or heavy ovenproof pot with a lid inside the oven to preheat as well.

Bake the bread  :

Carefully remove the hot casserole dish from the oven and place the dough (with the parchment paper) inside.

Cover with lid and bake for 30 minutes.

Remove the lid and bake for an additional 10 to 15 minutes, or until the bread is golden brown and sounds hollow when tapped.

Cool and serve  :

Carefully remove the bread from the casserole dish and place on a wire rack to cool completely before slicing.

Enjoy your homemade artisan bread with butter, jam or as an accompaniment to your favorite dishes.
