Ingredients:
2 pounds of potatoes (russet or Yukon Gold), washed and diced into 1-inch cubes
1 large onion, diced
3 cloves of garlic, minced
2 tablespoons olive oil
1 teaspoon paprika
1 teaspoon dried thyme
1 teaspoon dried rosemary
Salt and pepper to taste
Optional toppings: chopped fresh parsley, grated Parmesan cheese
