I once brought this to a potluck, and it caused a scramble as everyone tried to get a taste.

Ingredients:

4-5 medium red potatoes, diced

2 tablespoons mayo

1 teaspoon each of garlic powder and dill

1 onion, finely chopped

Salt and freshly ground pepper, to taste

1/3 cup finely grated Parmesan cheese

Instructions:

Begin by preheating your oven to 425°F (220°C). Prepare your baking sheet with either parchment paper or a light layer of non-stick spray.
